Salmon Soup
This comforting salmon soup combines tender fish, potatoes, vegetables, and fresh herbs in a savory broth. For a richer finish, add a small amount of cream.
Ingredients
- Salmon fillet, skinned and cut into bite-size pieces
- Potatoes, peeled and diced
- Carrot, sliced
- Onion or leek, chopped
- Fish or vegetable stock
- Bay leaf
- Fresh dill
- Cream, optional
- Salt and black pepper
Preparation
- Gently cook the onion or leek in a soup pot until softened.
- Add the potatoes, carrot, stock, and bay leaf. Simmer until the vegetables are nearly tender.
- Add the salmon and cook gently until it is opaque and flakes easily.
- Stir in cream if desired, then season with salt, pepper, and fresh dill.
- Remove the bay leaf and serve warm.
Avoid boiling the soup after adding the salmon, as gentle heat helps keep the fish tender.
