Salmon Soup

This comforting salmon soup combines tender fish, potatoes, vegetables, and fresh herbs in a savory broth. For a richer finish, add a small amount of cream.

Ingredients

  • Salmon fillet, skinned and cut into bite-size pieces
  • Potatoes, peeled and diced
  • Carrot, sliced
  • Onion or leek, chopped
  • Fish or vegetable stock
  • Bay leaf
  • Fresh dill
  • Cream, optional
  • Salt and black pepper

Preparation

  1. Gently cook the onion or leek in a soup pot until softened.
  2. Add the potatoes, carrot, stock, and bay leaf. Simmer until the vegetables are nearly tender.
  3. Add the salmon and cook gently until it is opaque and flakes easily.
  4. Stir in cream if desired, then season with salt, pepper, and fresh dill.
  5. Remove the bay leaf and serve warm.

Avoid boiling the soup after adding the salmon, as gentle heat helps keep the fish tender.
